Sunday dinner: Rack of Lamb with Ratatouille

My sister and my mama made dinner the night before. So it was my turn I guess. Mamacita had pulled out the rack of lamb. I said, "Guess I'm making rack of lamb." God bless foodnetwork.com, so I type in "rack of lamb" to see what I could realistically do.

I knew mi mamacita had tarragon in her pantry so I wasn't worried there. Honestly, ever since I've seen the Disney movie "Ratatouille", I've always wondered... how hard can it be?! Seriously though, if a mouse can do it, I can cook it!

I found this recipe for Rack of Lamb with Ratatouille. I will also be straight about the fact that by the time that I was done I didn't have the energy--maybe I had the time to make the gravy.
