"MND" that stands for Monday Night Dinner!! So it's not everyday that I feel like making a two... maybe three-course meal. C's roommate's dad had never experienced jaxie's Stuffed Porkchops. The time had come... who doesn't love and appreciate cornbread stuffing porkchops wrapped in... (pause for suspense) BACON!!!
Okay... so after about a three-hour drive from SF to Sacra-tomato... I breeze in... pull out the stuff and start cooking. I can honestly say that I have some cooking experience that I can actually time these courses to all come out at the same time.

You'll never have seared scallops such as this--mi hermano found this recipe for Seared Scallops with a dressing made of... (pause for suspense) Silken tofu. Honestly, I have NEVER ever made anything with silken tofu.. but this is my favorite recipe. I'm still perfecting it, cuz I gotta figure out how to get it smooth without a blender or food processor. I tell you like I tell the boys, "It may look funny, but it sure tastes good."

The recipe for Roasted Fingerling Potatoes
2 lbs. fingerling potatoes
6 cloves of garlic, crushed (hmmm... I used minced)
EVOO (drizzled), about 1 or 2 tablespoons
salt and pepper
Heat oven to 500 degrees.
Spead potatoes on a cookie sheet. Spinkle garlic over potatoes. Coat evenly with extra-virgin olive oil (EVOO) and season with salt and pepper. Roast for about 20 minutes.
