Mother's Day dinner







Mom's Day... I try not to make it the only time I make dinner for my mother. But somehow it turns out that way. One year, it was Seafood gumbo--which turned out great, stuffed with fresh crabmeat--just the way mom likes it,-- a few shrimp, and some chunks of fish.
I consulted a few of my expert sources on what I could venture to cook for this special occasion. And then, it was suggested by a chef of a cafe I frequent, he said why don't you try "rack of lamb". I thought about it for a moment. It's not something I had ever done before. My mom would appreciate that.

My mom goes to pull out a hunk of meat out of the fridge that she believes is "rack of lamb". Unfortunately, it turns out to be rack of pork! Fortunately for me, I wasn't already set on a recipe. I'm flexible. So I find a delicious recipe to try.

This was served with my mushroom risotto (not so famous anymore--I don't know what went wrong. I want to blame it on my mom's spider burners--I'm just not used to the heat intensity that comes out of the burners. ) And of course we needed a vegetable--I roasted asparagus with garlic, olive oil and I think I may have smashed up some thyme too.
